Brisket Recipe

(Pellet Grill with Steak Tank Brisket Au Jus)

**Ingredients:**
- 16-18 lb brisket, trimmed of exterior fat
- Heath Riles Garlic Jalapeno Rub
- Steak Tank Attack! seasoning
- 75% water and 25% apple cider vinegar mixture for spritzing
- Charcoal pellets
- Full-size disposable steamer pan
- Aluminum foil
- Au Jus mixture ingredients (see recipe below)

**Instructions:**

1. **Preparation:**
- Trim the exterior fat from the brisket.
- Generously season the brisket with a 50/50 blend of Heath Riles Garlic Jalapeno Rub and Steak Tank Attack! seasoning.

2. **Cooking Process:**
- 5:00 p.m.: Place the seasoned brisket on a 200°F pellet grill.
- 8:00 p.m.: Spritz the brisket with the water and apple cider vinegar mixture.
- 11:00 p.m.: Spritz the brisket again, insert a thermometer, and set the alarm to 170 degrees. Top off charcoal pellets for overnight cooking.
- 6:00 a.m.: Spritz the brisket, check the pellet hopper, and increase the temperature setting to 275 degrees. Monitor the meat temperature until it reaches 170 degrees.

3. **Wrapping the Brisket:**
- Once the brisket reaches 170 degrees, pull it for wrapping.
- In a full-size disposable steamer pan, place 3 large sheets of aluminum foil and position the brisket in the center.
- Pour the warm Au Jus mixture over the brisket, wrap it tightly with foil, and reinsert the temperature probe.
- Set the alarm for 203-206°F and return the wrapped brisket to the pellet smoker. Monitor the temperatures until it reaches tenderness desired.  

Probe brisket for tenderness through the aluminum foil. If you feel resistance, then put it back on the smoker for a few more degrees and retest. Otherwise, leave wrapped in foil wrap again in a towel and set inside a cooler or room temp oven for at least 1 hour before carving.

**Steak Tank Brisket Au Jus Recipe:**

1. **Ingredients:**
- 2 cups boiling water
- 6 teaspoons Fiesta beef flavor concentrate
- 1 can Beef Consomme
- 1/4 cup Craft Brewed Worcestershire Sauce
- 1/4 cup Steak Tank Tactical Sauce
- 1/2 stick of butter
- 2 tablespoons Steak Tank Attack
- 2 tablespoons corn starch

2. **Preparation:**
- In a saucepan, combine all the ingredients.
- Bring the mixture to a boil for 2 minutes, then simmer on low for 15 minutes, stirring frequently.
- Use the Au Jus mixture to pour over and wrap the brisket as per the main recipe above.
